We came to real bread
because we had to.

We are a family micro-bakery in Dallas, milling organic grain fresh and baking bread our own family can truly eat.

When our son was diagnosed with Crohn’s, we were told to expect a lifetime of medication. Instead, we began asking better questions about food.

It took time. Two years of paying attention, adjusting, learning, and staying consistent. But his health turned around. That experience led us to rethink everything, including bread.

For the first time, it was no longer something he had to avoid. It became what it was always meant to be: real food that nourishes the body.

What we saw

We tracked his progress carefully. At diagnosis, his calprotectin, a marker of gut inflammation, was 1,071. Two years later, it had dropped to 106. He regained the weight he had lost, his labs normalized, and the kid who once could not make it through a school day was running five-minute miles in track meets.

One marker surprised us even more. Akkermansia, a key indicator of gut lining health, had been undetectable for over two years. After introducing fresh-milled bread, it returned to a normal range.

Food is what did that.

Why we mill

Wheat begins to lose nutritional value as soon as it is milled. By grinding organic wheat berries fresh each morning, we keep the bran, the germ, and the full nutrient profile intact. What goes into our bread is simple: real ingredients you can recognize and trust.

Why “Five Loaves”

The name comes from the idea of multiplication, taking something small and using it to feed many. We found something too valuable to keep to ourselves. So we bake, we teach, and we equip others to do the same in their own homes.
